Remove author name from document in Pages
How to remove the author’s name and all identifying information from a Pages document

What makes you think that an author name or other privacy information is stored in the entirely encrypted contents of a Pages document? You are concerned about something that does not exist in the Pages documents.
Pages is neither a Word clone, nor has the same internal document structure. When you export a PDF, or Word document from Pages, those resulting documents also do not bear any author name or privacy information - but certainly would if created by MS Word or a Word clone.
I have just sifted through the internals of a four-page Pages document and found nothing bearing my name, or anything else about me.
Unrelated to Pages, the Preview application (Sequoia, Tahoe) will use your proper name for annotations even when you have set the name on its Settings PDF panel to something different. Mine is set to Anonymous and it still uses my proper name in Annotation userName field. I have reported that to Apple.
