How do you move HEVC files from iPhone to PC?

Using HEIF or HEVC media on Apple devices says (at the very bottom, under Importing HEIF and HEVC media via USB) I need to tap Keep Originals so I get the original HEVC format instead of the .mov. But when I take a 4k60fps video and look at the details in the Photos app, it says HEVC while it's still .mov under the same filename in the folder on PC.

iPhone 11 Pro Max, iOS 18

I don't quite understand your question.

.mov wrapper can have either HEVC a.k.a. H.265 video or H.264 video codec.

Older Windows versions do not readily support H.265 (and .heic) so there is an option to convert it to the old H.264 codec (and .jpg) with the "Automatic" option via USB (but in my experience in iOS/iPadOS 18 the setting transfers as H.265 anyways even to Windows 10 with no HEVC or .heic add-ons).
