Apple photo albums have unwanted music
when I make a photo album I can see a slideshow of the photos but apple adds music that I don’t want

There's no way to turn off the music entirely. You can turn down the volume completely or click on the middle button an select different music.
The only other option is to select all of the photos in the album and use the File ➙ Create ➙ Slideshow menu option and not add any music to the slideshow project.
The project can be deleted without removing the photos from the library or original album.
