I’ve been missing a lot of my important dates on the calendar ever since all of their colors changed to be the same a year ago. I understand they have a feature where you can create separate calendars and then put the dates on each individual calendar, but I’m confused on how this is better from what they had before.

It is possible to select the calendar colors.
The following image is from iPad on iPadOS 18.6, but iPhone works similarly.
Tap the ℹ️ button (left green circle), then select the color (right green circle).
I’m not aware of having per-event colors, rather than the longstanding per-calendar colors.
