the ‘wallet’ on my phone has my gyms QR code for me to scan in. However, when I open the wallet app on my watch (se), I only can see the one payment card Imhave in my wallet, why don’t they sync?

Apple Wallet typically doesn’t sync security or financial instruments. The gyms app has to support Apple Wallet. Does their app in the App Store say it supports Apple Wallet?

I know that on my iPhone 16 I can open the wallet to scan in. But most have it right on their watches in their wallet.
