Change email address in App Store
Hi,
my son was in our Family but now i took him away. The problem is that what ever we do it is still my email address that is in App Store. How can we solve it?

You were the Organizer for a Family Sharing group, your son was also in the group until you removed him? I am not seeing what the problem is now. If you no longer wish to be the Family Sharing Organizer you will have to disband the entire family group. Read about how to do this by clicking here --> Leave Family Sharing - Apple Support If minor children are still part of the group they have to either be transferred to another group or have their accounts deleted entirely.
