How to prevent sleep tracker from splitting sleep hours on Apple Watch?

I work overnights and usually set my sleep schedule from 0900-1730 in the Health app. Sometimes I sleep later within the same week, from 1100-2000. I have sleep mode turned on each time I sleep with my Apple Watch. How do I make sure that my sleep tracker doesn’t split up the later hours of my sleep to the “next day”?
