Hardware looks good.

Have you tried rebooting into safe-mode? Normally safe-mode is slower than a standard boot, but if safe-mode starts up much faster that would indicate one of your startup applications is causing problems. Start up your Mac in safe mode - Apple Support

If you have inconstant performance (some Apps open quickly, others/most open slowly) the issue may be Fusion Drive logistics. Items stored on the SSD component will open 10-20x faster than items stored on the HDD component. MacOS tries to be smart about what is kept on the SSD, but there is only enough SSD for ~8% of your data and sometimes important applications end up in HDD space. If you want everything to open consistently quickly you will need a high capacity pure SSD. If you think a 3TB Fusion Drive is "real slow" you may want to look at external Thunderbolt drives such as an OWC Envoy Pro.

Please download and run Etrecheck.  The free version is sufficient.

Copy and paste the results into your reply. Etrecheck is a diagnostic tool that was developed by one of the most respected users here in the ASC and recommended by Apple Support  to provide a snapshot of the system and help identify the more obvious culprits that can adversely affect a Mac's performance.

Copy the report

and after clicking on the Reply button use the Additional Text button to paste the report in your reply.

Check Etrecheck's Privacy settings and make sure the checkbox for full disk access before running:

Then we can examine the report and see if we can determine the cause of the problem.

just ran it in safe mode, it was a tiny bit quicker but everything was lagging. I've restarted it now and just seeing if i can sort some files and stuff to clear some crap off the system. Does it speed stuff up if you partition the drive or is there a better way to have it set up. I use creative suite and deal with some pretty large files at times
