Sierra may not be enough to manage an iPhone that is running iOS 18. If you look at the Technical Specifications for the iPhone 16 series phones (which shipped with iOS 18), you'll see that they require at least High Sierra.

I believe that all Macs which can run Sierra (10.12.*) can also run High Sierra (10.13.*).

How to download and install macOS - Apple Support

If you do upgrade, I would suggest making a bootable clone backup of your system, on an external drive, before you do the upgrade – just in case something goes wrong and you need it to recover. (Carbon Copy Cloner and SuperDuper! can both make such backups.)
