How do I run existing vmWare Windows Server 2016 instances on new Mac Pro M2 Ultra?

I have a number of vmWare Windows Server 2016 instances and am updating all the Mac Pro Towers to the latest unit (M2 Ultra). Is there a way to convert these instances so they will run on the new Apple Mac Pro. I don't want to have to rebuild the instances

No.

Apple Silicon cannot run instances of x86 versions of Windows as the architecture is entirely different and there is no translation layer for them.

You can't even set up new Vmare instances of x86 Windows versions except for Windows 11.

If you need to maintain access to Windows servers, you will need either an Intel Mac or an actual PC / x86 server.
