I recently gave my old Apple Watch to my granddaughter. That watch was never paired with my current iPhone. She is trying to pair the old watch with her iPhone, but is locking her out. How can she clear all my old data and pair the old iPhone with her Apple Watch?

You are posting to a user to user, volunteer tech support forum. The volunteers are not always available to answer questions immediately.
As for your Apple Watch, even if you never paired it with your current iPhone, it was once paired to an iPhone. In order for your granddaughter to use that watch, the person who set up the activation lock must go thru the steps outlined in the link below. Otherwise, your granddaughter will not be able to use it.
