Email Signature Overlapping - 16 Pro Max

I’m using Apple Mail to send emails on my iPhone. I have a signature for my business email which is just text, since images aren’t supported (doesn’t make sense why).

When I go to reply to an email, my signature shows along with the text from the previous email. It doesn’t seem to do this on MacOS’s mail app, just on the mobile version of Apple Mail. See screenshot for reference. I need to get this fixed ASAP!
