Sounds annoying! To fully remove iPhone Mirroring and stop the authorization prompts, go to System Settings > General > Login Items and remove anything related to iPhone Mirroring. Then head to System Settings > Privacy & Security > Screen Sharing & Remote Management, and make sure nothing is enabled there. Lastly, check Library > LaunchAgents and LaunchDaemons for leftover files and delete anything related. Restart your Mac and it should stop bugging you.
