Someone sent me apple cash in a message. I don’t recall if I accepted it but it does not give that option. The person who sent it says the money gone from her account. I do not have it because I do not want to set up apple cash. Its been over 8 days. Where is the money???

When you accept a payment through Messages or Wallet, the money is saved to your Apple Cash card. If you don’t have Apple Cash set up yet, you should be prompted to enable it when you press Accept.
You’ll need Apple Cash set up to accept peer-to-peer payments, but you can immediately transfer the funds to a debit card you have linked in Wallet. Since it has been more than seven days, the transfer should be cancelled and the money should be returned to the original account.

Justahelpfulperson is correct. Funds are returned to the sender via ACH transfer and takes approximately 1 to 3 business days. If the sender does not already have the funds back, they should have them no later than Monday or Tuesday next week.
