how do I find my card number?
tapping on my Apple Card in the wallet, there are only 4 choices and not even "card details" gives me access to this. I need it to request a refund from a vendor.

The vendor does not need a card number to process a refund. In fact, you won't have access to a card number, just the last 4 digits of the device account number used in the transaction.
