iPod mini 2nd gen how to reformat with macOS 15.3

I have recently purchased a 2nd gen iPod mini with the intent of refurbishing it with a new battery and larger internal storage. It turns on and appears to be trying to charge when I connect it to a USB power supply or a port on my M1 Mac Mini running macOS 15.3 Sequoia, however it will not mount it as a location, nor does it appear as a target in Disk Utility.

Looking at System Information under USB I can see that the system sees it, however I note that looking at "About" on the iPod mini itself it is showing as formatted for Windows.

I'm hoping there is some way to perform a factory reset or otherwise get it reinstalled for use with macOS Sequoia. It doesn't look like there's a version of iTunes available for anything newer than macOS 12.x so am I just out of luck here? I had hoped from research that older iPods were still supported on macOS, but it's not looking easy!
