I need to delete (or at least disable) copilot which is now destroying my work and sanity. Mostly using it on a macbook

That is a Microsoft app/feature of Microsoft 365.
If you want to get rid of copilot, get rid of your Microsoft products.
Any app, other than those installed by Apple, can be deleted by dragging it from the Applications folder to the Trash and then emptying it. A better way is to use a vendor provided uninstaller because sometimes, dimply dragging to the Trash may leave other bits of the app located in other places.
