How do I change keyboard shortcut to "empty trash"?

If you want to assign a different keyboard shortcut, you do it like any other:
System Settings->Keyboard,
click on "Keyboard Shortcuts", then click "App Shortcuts"
Click the + button to add new one, select "Finder" instead of the default "All Applications",
Type "Empty Trash" (without the quotes) as the menu title, and press the desired shortcut.
For example, afterwards, you may see this in the list of App Shortcuts:
Shift-Command-Delete: Empty the Trash.
Option-Shift-Command-Delete: Empty the Trash without confirmation dialog
