Email language keeps changing

The Apple email system language (as in the categories on the left primary email, junk, etc) regularly changes on my Macbook.

It's a 14-inch 2023 Pro running on Sequoia 15.1. but it was a problem before I updated to the latest OS.

Sometimes it'll be Chinese or French when I open it. Other times the language will change while I'm in the system.

It's hardly a big deal as it usually reverts back to English after I refresh. But it's certainly odd and annoying. Likely a system glitch that has no solution but thought I'd throw it out there.
