Can anyone help my 74 year old brain sync my apple mail (aol, google) across my three devices? 2020 MacBook running Sonoma 14.6.1, iPad mini 5th generation running iPadOS version 17.6.1, and iPhone 15 plus running iOS 17.5.1?
My fear is that the Mac and iPad are to old to be compatible with the phone...

You Mac is young enough as is your iPhone 15. The mini should be ok. You should be able to update them all to the current os at your leisure.
Gmail on on three should work but they it won't be icloud that does that it will be Gmail a.k.a Google. I am not sure about AOL since I have never used anything AOL.
