Hello, I've seen many tutorials saying just use a simple copy and paste. However, after I copy the image on my fully updated iPad Pro M2, the Paste option is simply not available. I'm figuring this out for the company CEO who only uses Apple Mail on his iPhone for many business messages. He will not use the Outlook app, so I need to make this work.

Your post’s title says “signature picture”, and your post’s body references copy and paste.
Disassociate the two and you should be fine.
Apple Mail signatures are text only. But you may paste an image into the bottom of the email body.
