how do i put an ipad pro in recovery mode without being connected to my network.

I forgot my ipad pros passcode and now its locked. it says its unavailable. there is not erase device notification at the bottom of the lock scree that some people say can pop up on the screen. When i connect it to my MacBook Air m1 it doesnt mount because i assume because its locked. How do i get it into recovery mode?
