Cease using iCloud?

Not being an in-depth user of computers I found it impossible for me to cease using iCloud and retrieving my files back to my iMAC. One way was to retrieve doc files, while another way was to retrieve calendar data... Apple made it extremely easy to shift everything to iCloud why can't they make it just as simple to restore everything even if it goes to one file? At least that would allow me, the owner, to place them back where they belong. I think the answer would be they want the money for larger file usage. I only use abut 1/4th of the iCloud and do intend to use more as I am just old retired guy. Thanks for making my life more confusing.
