I have no idea what I did, but all of a sudden my project has gone from color to black-and-white. I cannot find anything on the Internet that speaks of this. What the heck did I do? I was just typing and it ended up being in the wrong field the next thing you know I look up and it's black-and-white. Very frustrating. I've already spent an hour trying to figure this out.

You may have accidentally changed the Channel Options to one of the ones below RGB Only which, considering the keyboard shortcuts, could be very easy to do:
The channel options menu is the one before Render at the top right of the Canvas — check that to see if you're setting is not on RGB Only.

Can you post a screof your timeline and viewer?
I can’t think of a way to immediately make everything black and white at once unless there is an adjustment layer and the saturation is turned all the way down
No, there is no adjustment layer. I am perplexed.
