Will my out of date macOS on the iMac successfully transfer data to a new Mac?

I have an imac 27" LATE 2012 running 10.15.7 (Catalina - cannot upgrade any further) and am considering upgrading to a mac studio.

Will my out of date OS on the imac successfully 100% transfer data and apps to a new mac.

Without knowing which apps you are concerned about it's impossible to say. Nevertheless, migrating data from the older Mac to its replacement is what you should do. The worst that will happen is that some programs won't work, and you will need to update them or purchase new versions (Microsoft products come to mind).

In general migrating data to a new Mac is most successful when transferring it from fairly recent operating systems. Catalina isn't that old.
