iTunes backup

I backed up

my 31gb of file using iTunes to windows laptop. Then I formatted my iPhone 11 and turned it on. I was using an eSIM in order to make a call before restoring back the data, I skipped all the formalities of setting up the new iPhone. After that when I tried to restore from the earlier back up it didn’t come back. And backup time was also shown different. The restoring took some time and although no data came back. Tried again to restore the backup, But this time it took only 5-10 seconds. Phone turned on but still no data. Tried to contact apple support but still they didn’t gave me a solution. All my datas file can be seen in the folder location(31gb of data). If anyone undergone this like issue please respond, if the data can be recovered or if there is no solution.
