Here’s a helpful information from Apple themselves. So as far as I’ve found, this is a full guide for the Mac Pro; including how to install the hard drive:

That generation of Mac Pro can take any normal Serial ATA hard drive. The easiest way to reinstall Mac OS X will be from the original installation disks, though if you can make a bootable USB installer for a version of macOS up to El Capitan, that will probably work.

+1 to what varjak paw wrote… any Serial ATA drive will work ( I think it’s SATA II? As well, if your budget allows it, you could use an SSD as an alternative…its positives are that read/write speeds are faster than a SATA drive… the negative is that it costs more than a SATA drive -and that it may only be available in capacity up to 4TB( they might make a bigger one, eg 8 TB, but the price 😱… as for installation, from the original dvd’s will be fine.. but assuming you have access to another Mac( maybe a Windows computer) you can make a bootable usb installer for a version of MacOS up to El Capitan.. I used DiskMaker X in the past to do that successfully… the stick should be 16GB in size…
