Using Numbers I am trying to design a spreadsheet where I keep track of my time worked. In the example in column G, I need a formula which will post either my guarantee of 3 hours, which is my minimum trip pay, of if the trip is more than 3 hours it would post the value in E which is the total time for the trip (the difference between D and C),

Have you had a look at the 'Employee Schedule' template?
It has a 'Sign In' table that calculates hours worked.
You'll then want to use the MAX function so that you always have at least 3 hours.
