I have cards in my Wallet on my phone other than the Apple Card. Even if I select an alternate card as the default card in Wallet before trying to fill in payment info in an online purchase the only card ever offered by my phone to fill in the payment info is the Apple card. Why can’t I use the other cards?

AutoFill in websites does not use cards added to your Wallet app directly.
It uses cards added to the Autofill settings in the web browser.
If using Safari, for instance, you can go to Settings ➜ Safari ➜ AutoFill ➜ Add Credit Card, to add cards that Safari can use for that purpose.
