Is it possible to configure the Numbers so that grid lines are disabled by default?

Turn off the gridlines on a table. With that table selected, right click on the top left table style in the format sidebar and choose "redefine style from selection". You can choose to restyle all the existing tables or leave them as they are. All new tables will be given the style with no gridlines.
