One of our school iPads has been locked to an unknown student and we are not able to remove the Activation Lock. Is Apple Support able to assist with fixing this issue?

If you have the device enrolled in Apple School Manager or if you have the original purchase receipt, they can assist you. Otherwise, you have a paperweight.
If you haven't already, you should ensure all devices are enrolled in a Mobile Device Management (MDM) platform that supports activation lock bypass escrow.
