there is no lock card one the apple wallet three dots corner screen on my apple wallet? or I can lock the wallet? otherwise, it pays too quick, i don't have time to choose other card beside the default card.

You select a different card by opening the wallet app first and selecting the card. If you just present your device near the reader, the default will be selected.
The lock on Apple Wallet is called Face ID. It prevents unauthorized use of Apple Wallet and the payment methods that have been added to the Wallet app.
