I have a rather extensive grocery list in my notes. Is there someway to say the list but still allow To check An item I need And then uncheck the item after I have bought it
Each item has a small circle that can be highlighted before I go to the store and cleared afterwards. I just don’t want to accidentally erased the list I have saved.

No, a grocery list (nor anything else) in Notes cannot be saved. Any changes you make are there to stay.
If I were you, I’d copy the the whole list, then paste it in a New Note so that you have a backup copy.
Or, you could copy paste it into Messages, and send the list to yourself as a text message. Then it can be copy/pasted from Messages into Notes in a few seconds, if anything happens to your original list. If the “circles” don’t come along with the list from Messages, simply highlight the whole list, and tap the button circled in red:

I have found the Reminders app to be far better for maintaining a grocery list. As shown in the screenshot below, it can be customized to show needed items, broken down into categories that make sense for the way you shop.
