The original iPhone SE isn't capable of 16 or above; that watch model can be paired with an iPhone 8, second generation iPhone SE, or any newer unit.

The iPhone SE 1st generation will not be compatible with Apple Watch Series 8. I suggest you upgrade your iPhone to iPhone SE 2nd Generation or later.
