How can I get paper statements in the mail?

Normally not possible. Apple Card is paperless by default. Unless there is an issue with the email address used for the Apple ID you applied with, you will not get a paper statement.
If you need a physical statement, print out the digital statements you can download form the Wallet app or https://card.apple.com.
