My Appel watch needs to update but I can’t update is cuz it needs to be set up there for I can’t connect my watch to Wi-Fi how do I do it?

You don’t. In order to be updated an Apple Watch must be paired with an iPhone that is connected to WiFi. The watch is updated through the Watch App on the iPhone.
