Hi, granville32, you could try this: Connect a wireless game controller to your Apple device - Apple Support (CA)
There’s also GamePad pro companion on the App Store… in addition, there are various wired controllers you could try… Scuf, Astro, Razer to name 3 makers… there are 2 USB-A ports on your Mac mini 2023 so you should be good to go…

It may be better to check some of the flight sim forums. Those guys and gals have strong opinions on controllers. I liked Saitek back in my beta-testing days, but that was when macOS 10.4 Tiger was "Hotel Sierra."
