How do I stop documents I save from automatically going into iCloud? When saving to desktop, It shows: "Desktop - iCloud". I'd like to save to desktop only.

If I want to store a document I'd prefer to do this manually, in a backup or not at all. I don't see the need to have my iCloud storage filled with random documents.

Sounds like you may have Desktop and Documents turned on. See Add your Desktop and Documents files to iCloud Drive - Apple Support
