Phishing email
I stupidly called a phone number via hyperlink on my iPhone from a phishing email scam. The phone rang once and the basically hung up. Should I be concerned about my phone being compromised or my information?

They may have gotten your phone number. Emails such as those can't compromise an iPhone.
