I have connected my new air pods to bluetooth and they show up on my phone and I can hear my Audible books now. The question is, since I also have bluetooth hearing aids which are also connected to my phone on bluetooth. When II remove my air pods, will the hearing aids take over the sound of the book unless I stop it?

if both are using the bluetooth profile a2dp List of Bluetooth profiles - Wikipedia
then you can only connect more than 1 device if all devices support bluetooth version 5
