I have a iPhone 12 Pro Max, and I don’t have an option for the IOS 16 update on the IOS 15.7 update. What do I do?

Check Settings->General->VPN and Device Management and make sure you don't have beta profile installed. If you do, delete it.
If you don't have a beta profile, then you'll just need to wait for the update to appear. Many reports of the iOS 16 update not appearing after updating to iOS 15.7. There's unfortunately no real solution but to wait.
