How many eSim and Sim can be installed on IPhone 13 Pro Max?

Did I get it right that if I have three phone numbers I can use for example 1 sim and 2 eSim on one phone, but should switch in the Settings from one nr to another as only two numbers might be active at the same time?

Correct. You could probably even have 3 eSIM profiles and an empty nanoSIM slot.
Don’t know what the “max” possible number of stored eSIM profiles is … other than “several” being cited in several seemingly solid sources.
And yes, only 2x “active” numbers at any one time.
Plus the single-active CDMA network limitation still applies.
With iPhone 13 Pro Max, iPhone 13 Pro, iPhone 13, and iPhone 13 mini, you can use Dual SIM with either two active eSIMs or a nano-SIM and an eSIM
Note that you can have several eSIM profiles installed, but as already answered
… only 2x SIMs can be “active” at any one time …
… and only ONE of the active SIMs can be a CDMA network.
