Once started a subscription will always renew automatically unless you cancel it. Here is a one-stop link for billing questions→Subscriptions and Billing - Official Apple Support. You can review your purchase history to see what you were charged for, cancel subscriptions and request refunds.
Besides deleting the app did you also cancel the subscription? If you want to cancel a subscription from Apple - Apple Support
