Hello!

If your watch is not pairing with your iPhone then have a look at this article:

If your Apple Watch isn't connected or paired with your iPhone – Apple Support (UK)

If your Apple Watch still does not pair with your iPhone you can also have a look at this Article:

Once you have done that, you will then want to pair your Apple Watch again:
