I am only asking this question again because it hasn't been answered in a few years and I am sure someone has it figured out by now.....I hope. Is there any possible way data can be retrieved from an iPhone 8 that was destroyed and NOT backed up in months?

The truth is that **maybe** it's possible to retrieve the contents of an iPhone that's been heavily damaged. The parts that are critical are the processor, flash memory, flash controller, and security components. Most data recovery services will try to do as much repair on the existing logic board as possible, but if it's too damaged, but those components I mentioned are more or less intact, it might be possible to use a "donor device" and transplant those components to see if it works.
Obviously, nobody would really want to go through that much trouble just to get a working device. It's only useful if the data is valuable enough to the user to pay for that, even with a chance that it doesn't work. A lot of data recovery specialists don't charge if they don't recover data, but if a donor device is needed, the customer will be responsible for at least the cost of that donor device.
