Hi Bruce Baum,
Welcome to the Apple Community.
Re: "How do you keep camera on iPhone iOS 15 in raw"
(NB: RAW: For iPhone 12 Pro, 12 Pro Max, 13 Pro, 13 Pro Max)
Try: Settings > Camera > Format > toggle ProRAW on
Seems, once toggled on in Settings, back in the Camera App you can easily turn RAW on (or off), via the RAW button at the top.
All the best :-)

Thanks for the response. Apparently it was a user error.
Oddly we have 2 iPhone 13’s with 15.2 (loading 15.2.1 today). One always worked correctly for me.
Best,
Bruce
