How to change the goal within a Workout on Apple Watch 6

For some reason, when I am using the Hiking workout on Apple Watch 6, the watch has chosen 610 calories as my goal. I don't want to use calories as my goal as I would prefer to have an Open goal. Try as I might, I have been unable to substitute Open Goal for 610 calories within the Hiking Workout. I have hit the 3 dots trying to change the goal to Open, but it doesn't change.

Same issue within the Pickleball workout app on the watch. The watch thinks I want to work out for 10 minutes and I have tried to change the goal to Open Goal but have been unsuccessful.

Would appreciate any counsel as to how to accomplish this change of goal within a workout. Thank you

In a workout, tap the circle with the 3 dots in the upper right corner to set/unset workout goals.

You may then actually have to perform a workout for the "new" goal to stick.
