Welcome to the Apple Community.
It seems:
Trust Stores contains trusted root certificates that are preinstalled with iOS, iPadOS, macOS, tvOS, and watchOS
Not trusted, may mean they are out of date.
Apple support have an article online listing the certificates ... and expiry dates.
... there is a link in the article for iPhones with different operating systems (iOS numbers)
List of available trusted root certificates in iOS 14, iPadOS 14, macOS 11, tvOS 14, and watchOS 7:
