Welcome, Jimmy-jam, to Apple Support Communities!

One would need an Optical Character Recognition (OCR) tool (software) to convert the image of your text, in your screenshot, to copyable text.

I’ve accomplished this using some free Apps from the App Store, on my iPad.

There may be some such for macOS.

(There’s always the “pay to play” Adobe PDF tools.)

Sign in to Google Drive, and drag.drop your image bearing text up to Google Drive. Right-click on the image and choose open with Google Docs. You will now have the image, a. horizontal line, and below it, the text from the image that you can copy/paste elsewhere. You can also download the image and the extracted text below it in an MS Word .docx or other document formats.
