Welcome to Apple Support Communities. If we understand correctly, you are referring to your Daily Cash from purchasing a device with your Apple Card Installments. Is that right?

You don't have to set up Apple Cash. If you don't set up Apple Cash, this Daily Cash will accumulate and you can use it towards your Apple Card balance. Check out How to view and pay Apple Card Monthly Installments.
